14 December EDWINS Culinary Institute Graduation at CCI December 14, 2017 By ODRC Chillicothe Correctional Institution (CCI), Institutions CCI, EDWINS Culinary Institute, Hospitality Skills, Derrick Speights, Graduation 0 Graduation was held at the Chillicothe Correctional Institution for a class of men participating in the EDWINS Culinary Institute. The program provides 22 weeks of intensive training where the men are taught hospitality skills and the fundamentals of cooking they are able take with them upon release. This great program was started by a man that realized being a felon with a prison record is a stigma hard to overcome and decided to do something about it. CCI has been teaching this program since October 2015 with 110 men graduating! At the end of each graduating class, the students spend the day preparing a meal and share their cooking talents with all the men in the Reintegration Unit. This graduating class selected enchiladas, fried rice, and pineapple upside down cake! Derrick Speights (Edwins staff) was present for the graduation and issued all the men their completion certificates.
